Each city has its own selection, with a page for each type of accommodation.

In my selection, the top-rated is Four Seasons Hotel George V (Hotel (palace)), with 9.9/10 (73 reviews · Trip.com). Next come Hôtel Eiffel Blomet (8.9/10) and L'Hôtel du Collectionneur (8.8/10).
Yes at Molitor Hôtel & Spa - MGallery: the pool is advertised as heated all year round. Four Seasons Hotel George V, Hôtel Eiffel Blomet and L'Hôtel du Collectionneur have an indoor pool, sheltered from the wind. Either way, ask for the heating dates before you book.
Advertised temperatures: 29 °C at L'Hôtel du Collectionneur, 31 °C at Ritz Paris and 30 °C at Le Burgundy Paris. For the other places the temperature isn't published: ask the property.
Yes: Mandarin Oriental Lutetia, Le Burgundy Paris and Hôtel Fouquet's Paris also have a hot tub in addition to the heated pool.
